BLOND BROWNIES WITH WHITE CHOCOLATE

These brownies come with a different twist than the regular traditional brownie due to the addition of white chocolate chips and raisins. The recipe is quick and easy to prepare. It is a tasty treat to enjoy with a cup of tea or as part of an afternoon tea spread.

Ingredients:

¼ cup (1/2 stick) unsalted butter, melted.

1 cup packed light brown sugar.

2 eggs

¾ teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

¼ teaspoon salt

½ cup white chocolate chips

½ cup golden raisins

Method:

  1. Preheat oven to 350°F. Grease and flour an 8-inch square baking pan.
  2. Pour melted butter in a large mixing bowl. Stir in sugar, eggs, and vanilla extract. Whisk together flour, baking powder and salt. Stir into the butter-sugar mixture. Stir in the chocolate chips and raisins. (The batter will be thick.)
  3. Spoon it into the prepared pan and smooth the top of batter. Bake in the center of the oven for 35 minutes or until a tester inserted in the center of the brownies comes out clean.
  4. Cool the brownies in the pan. Cut and remove while still slightly warm, then remove to a wire rack to finish cooling.

These brownies freeze well.
