These brownies come with a different twist than the regular traditional brownie due to the addition of white chocolate chips and raisins. The recipe is quick and easy to prepare. It is a tasty treat to enjoy with a cup of tea or as part of an afternoon tea spread.
Ingredients:
¼ cup (1/2 stick) unsalted butter, melted.
1 cup packed light brown sugar.
2 eggs
¾ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
½ cup white chocolate chips
½ cup golden raisins
Method:
- Preheat oven to 350°F. Grease and flour an 8-inch square baking pan.
- Pour melted butter in a large mixing bowl. Stir in sugar, eggs, and vanilla extract. Whisk together flour, baking powder and salt. Stir into the butter-sugar mixture. Stir in the chocolate chips and raisins. (The batter will be thick.)
- Spoon it into the prepared pan and smooth the top of batter. Bake in the center of the oven for 35 minutes or until a tester inserted in the center of the brownies comes out clean.
- Cool the brownies in the pan. Cut and remove while still slightly warm, then remove to a wire rack to finish cooling.
These brownies freeze well.
