Hibiscus Sparkling Iced Tea

Hibiscus Sparkling Iced Tea

This iced tea is ideal for enjoying on a warm day.  It provides a flavorful alternative to traditional iced teas or cocktails. Serves 4

Ingredients:

4 cups water

1 cup Hibiscus or Hibiscus Queen loose leaf tea

1/3 cup honey or to taste

Juice of one lemon

Sparking water or sparkling wine to top off glass

Ice cubes

Fresh spearmint leaves for garnish (really added to the taste)

 

Instructions:

Bring 4 cups of water to a boil in a medium-sized pot, remove from heat, and add the tea.  Cover and let steep for 10-15 minutes.

Strain and pour the tea into a large pitcher.  Stir in the honey and lemon juice.

Allow the tea to cool to room temperature then refrigerate it until completely chilled.

Fill glasses halfway with ice cubes and pour the chilled tea over the ice (leave some space at the top.) Top off each glass with sparkling water or wine to add effervescence.

Garnish with a sprig of spearmint and serve immediately.
