peach iced tea

PEACH FLAVORED ICED TEAS

SIMPLY PEACHY

1-quart fresh water

6 heaping teaspoons tea*

1 large peach (do not peel)

½ lemon

4 tablespoons sugar or sweetener

Boil water and make tea. Meanwhile, cut peach into small pieces and thinly slice the lemon. Strain out the tea leaves and add peach, lemon, and sugar. Stir well. Chill for several hours and serve over ice. *Sometimes we make it with Earl Grey for a different twist.

PEACH SWEET TEA WITH BOURBON

8 heaping teaspoons of peach-flavored tea

2 heaping teaspoons black tea

20 thin slices fresh ginger, sliced

2/3 cup sugar

1 cup bourbon

¼ cup fresh lemon juice

Mint, for garnish (optional)

In small pan heat 4 cups water to simmering. Remove from heat, add peach-flavored tea; steep 5 minutes. Add black tea; steep additional 5 minutes. Strain tea into a medium pitcher. Add 4 cups cold water; refrigerate until cold, about 4 hours.

In same pan, combine ginger, sugar and 2/3 cup water; heat to simmering and let simmer for 15 mins. Strain out and discard ginger. Refrigerate syrup until cold. Stir cold ginger syrup into tea along with bourbon and lemon juice. Serve over ice and garnish with mint
