Welsh Rarebit – Caws-Wedi-Pobi


Welsh Rarebit is perhaps the most famous Welsh dish of them all and like Scottish Haggis and Irish Stew you’ll find the world over.

It is a traditional Welsh dish made with a savory sauce of melted cheese and various other ingredients. It’s served hot after being poured over slices of toasted bread. The names of the dish originate from 18th-century Britain. This simple but very popular has been popular since at least the 1500s.  Checking back the first recorded reference to this dish is shown in 1725 when it was called ‘Welsh rabbit’.
If served with a soft-cooked poach egg on the top, it is called a Buck Rarebit. 


Ingredients:
1/2lb Sharp Cheddar
1 teaspoon butter
2 teaspoons Worcester Sauce
1 teaspoon dry mustard
2 teaspoons all-purpose flour
4 tablespoons milk or stout beer
4 slices of toast (use a firm slice of bread)
Salt and pepper  

Directions:

Toast the bread. Grate the cheese into a saucepan and heat gently until it melts. Add the other ingredients and mix well.  Spread over the toast and place under the broiler until lightly browned. Garnish with parsley and serve immediately 
Instead of precooking the cheese mixture, the grated cheese and seasonings can be mixed with enough milk or beer to give a spreadable mixture and spread on the toast and then broiled.  Garnish with parsley and serve immediately.
