A black tea from the Fujian province of China and is famous for its smoky aroma and flavor.
The tea leaves are first withered over pine root fires, then pan-fried, rolled and oxidized. Finally, the leaves are placed in bamboo baskets and hung on wooden racks over smoking pinewood fires to dry and absorb the smoke. (When told that his Captain Picard character would drink a lot of tea, Sir Patrick Stewart originally suggested that he drink Lapsang souchong, but the producers were afraid the audience wouldn't know what that was, so the character drank Earl Grey tea instead.)
